Ingredients:
- 16 oz Rotini or Fusilli pasta
- 1 tsp salt
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tbsp fresh lemon juice
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp honey
- 8 oz salami, diced small
- 8 oz pepperoni, sliced into half-moons
- 8 oz fresh mozzarella pearls
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely diced
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
Instructions:
- Boil a large pot of salted water. Add pasta and cook until al dente. Drain immediately and rinse under cold water until the noodles are completely chilled to the touch.
- Combine olive oil, red wine vinegar, lemon juice, garlic powder, dried oregano, salt, black pepper, and honey in a mason jar. Shake vigorously until emulsified and opaque.
- In a large bowl, combine the chilled pasta, diced salami, pepperoni, mozzarella pearls, cherry tomatoes, cucumber, red onion, and black olives.
- Pour the dressing over the mixture and fold gently with a spatula until every noodle is coated.
- Garnish with fresh parsley and refrigerate for 1 hour to allow flavors to meld before serving.
