Ingredients:
- 3 cups (450g) English cucumber, diced
- 2 cups (300g) cherry tomatoes, halved or quartered
- ½ cup (75g) red onion, thinly sliced or finely diced
- ¼ cup (15g) fresh parsley, chopped
- ½ tsp (3g) kosher salt
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) red wine vinegar
- 1 clove (5g) garlic, minced
- ½ tsp (3g) dried oregano
- ¼ tsp (1g) black pepper
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Place diced cucumbers and tomatoes in a colander.
- Sprinkle with the ½ tsp (3g) of salt and toss gently.
- Let the vegetables sit for 5 minutes to draw out surface moisture, then shake off any excess liquid.
- In a small jar or bowl, combine the olive oil, red wine vinegar, fresh lemon juice, minced garlic, dried oregano, and black pepper.
- Shake vigorously or whisk until the mixture looks opaque and creamy (emulsified).
- Transfer the drained vegetables and red onion into a large mixing bowl.
- Pour the emulsified dressing over the vegetables and chopped parsley, and toss until evenly coated.
