Ingredients:

  • 3 cups (450g) English cucumber, diced
  • 2 cups (300g) cherry tomatoes, halved or quartered
  • ½ cup (75g) red onion, thinly sliced or finely diced
  • ¼ cup (15g) fresh parsley, chopped
  • ½ tsp (3g) kosher salt
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) red wine vinegar
  • 1 clove (5g) garlic, minced
  • ½ tsp (3g) dried oregano
  • ¼ tsp (1g) black pepper
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Place diced cucumbers and tomatoes in a colander.
  2. Sprinkle with the ½ tsp (3g) of salt and toss gently.
  3. Let the vegetables sit for 5 minutes to draw out surface moisture, then shake off any excess liquid.
  4. In a small jar or bowl, combine the olive oil, red wine vinegar, fresh lemon juice, minced garlic, dried oregano, and black pepper.
  5. Shake vigorously or whisk until the mixture looks opaque and creamy (emulsified).
  6. Transfer the drained vegetables and red onion into a large mixing bowl.
  7. Pour the emulsified dressing over the vegetables and chopped parsley, and toss until evenly coated.
