- 1/2 cup (60g) pecans or walnuts, finely chopped
- 2 cups (250g) all-purpose flour
- 1 tsp (4g) baking soda
- 1/2 tsp (2g) baking powder
- 1 tbsp (6g) pumpkin pie spice
- 1/2 tsp (3g) salt
- 1 cup (245g) pumpkin puree
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 1/2 cup (115g) neutral oil
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) powdered sugar
- 1 tbsp (15ml) milk or heavy cream
- 1/4 tsp (1ml) vanilla extract
Instructions:
- In a medium bowl, whisk together 3/4 cup flour, 1/2 cup brown sugar, 1 tsp cinnamon, and 1/2 tsp salt for the streusel.
- Add the cold, cubed butter to the streusel mixture. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized lumps.
- Stir in the chopped pecans or walnuts. Set aside in the refrigerator to keep the butter cold.
- In a large bowl, combine 2 cups flour, baking soda, baking powder, pumpkin pie spice, and salt.
- In a separate bowl, whisk together pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into a parchment-lined 9x9 inch baking pan.
- Spread the chilled streusel topping evenly over the batter.
- Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
- Optional: Whisk together powdered sugar, milk, and vanilla extract to create a glaze; drizzle over the cooled cake.
