Ingredients:

  • 2 cups (180g) rolled oats
  • 1 ripe medium banana (115g), mashed
  • 1/2 cup (120ml) plain Greek yogurt
  • 1 cup (240ml) unsweetened almond milk
  • 1 scoop (30g) vanilla protein powder
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) vanilla extract
  • 1 pinch (1g) salt
  • 1 cup (150g) mixed frozen berries
  • 1 tbsp (15g) maple syrup

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
  2. Add the rolled oats, mashed banana, Greek yogurt, almond milk, protein powder, baking powder, cinnamon, vanilla extract, and salt into a high-speed blender or food processor.
  3. Process the ingredients until the mixture is smooth and reaches a thick batter consistency.
  4. Pour the blended batter into the prepared baking dish.
  5. Using a silicone spatula, gently fold in the mixed frozen berries until evenly distributed.
  6. Smooth the top with a spatula and bake for 35–40 minutes, or until the edges are golden brown and the center is firm.
  7. Allow the bake to cool for 10 minutes to set the structure before slicing into 4 servings.
  8. Drizzle with maple syrup if desired before serving.
