Ingredients:
- 1/2 cup (45g) Old-fashioned rolled oats
- 1/2 cup (120ml) Unsweetened almond milk
- 1 tbsp (12g) Chia seeds
- 2 tbsp (32g) Creamy peanut butter
- 1 tbsp (15ml) Maple syrup
- 1/2 tsp (2.5ml) Vanilla extract
- 1 pinch (0.5g) Sea salt
- 1/4 cup (60g) Plain Greek yogurt
Instructions:
- Pour the rolled oats, chia seeds, and sea salt into the bottom of an 8 oz glass mason jar. Shake or stir briefly to ensure the chia seeds are distributed.
- In a separate small bowl or directly in the jar, combine the peanut butter, Greek yogurt, maple syrup, and vanilla extract. Stir until the mixture is a smooth paste.
- Pour in the almond milk and whisk until the peanut butter is fully integrated and the liquid looks creamy.
- Pour the liquid mixture over the oats. Stir thoroughly to ensure no dry oats remain at the bottom.
- Seal the lid tightly and refrigerate for at least 6 hours, or overnight.
