Ingredients:

  • 1/2 cup (45g) Old-fashioned rolled oats
  • 1/2 cup (120ml) Unsweetened almond milk
  • 1 tbsp (12g) Chia seeds
  • 2 tbsp (32g) Creamy peanut butter
  • 1 tbsp (15ml) Maple syrup
  • 1/2 tsp (2.5ml) Vanilla extract
  • 1 pinch (0.5g) Sea salt
  • 1/4 cup (60g) Plain Greek yogurt

Instructions:

  1. Pour the rolled oats, chia seeds, and sea salt into the bottom of an 8 oz glass mason jar. Shake or stir briefly to ensure the chia seeds are distributed.
  2. In a separate small bowl or directly in the jar, combine the peanut butter, Greek yogurt, maple syrup, and vanilla extract. Stir until the mixture is a smooth paste.
  3. Pour in the almond milk and whisk until the peanut butter is fully integrated and the liquid looks creamy.
  4. Pour the liquid mixture over the oats. Stir thoroughly to ensure no dry oats remain at the bottom.
  5. Seal the lid tightly and refrigerate for at least 6 hours, or overnight.
