Ingredients:

  • 1 cup (160g) steel cut oats
  • 3 cups (710ml) water
  • 1/4 tsp (1.5g) fine sea salt
  • 1/2 tsp (1g) ground cinnamon
  • 1 tbsp (14g) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (14g) butter

Instructions:

  1. Combine steel cut oats, water, salt, and cinnamon in a large bowl or individual mason jars.
  2. Stir well to ensure no dry clumps remain and cover tightly with a lid.
  3. Place in the refrigerator for 8 to 12 hours to hydrate the oats.
  4. Pour the soaked oats into a saucepan over medium heat and bring to a gentle simmer for 3–5 minutes, stirring frequently until a thick, porridge-like consistency is reached.
  5. Remove from heat and stir in the vanilla extract and butter.
  6. Stir vigorously for 30 seconds to release natural starches for a velvety texture.
  7. Taste and stir in maple syrup if desired.
