Ingredients:
- 1 cup (160g) steel cut oats
- 3 cups (710ml) water
- 1/4 tsp (1.5g) fine sea salt
- 1/2 tsp (1g) ground cinnamon
- 1 tbsp (14g) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 tbsp (14g) butter
Instructions:
- Combine steel cut oats, water, salt, and cinnamon in a large bowl or individual mason jars.
- Stir well to ensure no dry clumps remain and cover tightly with a lid.
- Place in the refrigerator for 8 to 12 hours to hydrate the oats.
- Pour the soaked oats into a saucepan over medium heat and bring to a gentle simmer for 3–5 minutes, stirring frequently until a thick, porridge-like consistency is reached.
- Remove from heat and stir in the vanilla extract and butter.
- Stir vigorously for 30 seconds to release natural starches for a velvety texture.
- Taste and stir in maple syrup if desired.
