Ingredients:
- 6 large Granny Smith or Honeycrisp apples, peeled and sliced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 cup old-fashioned rolled oats
- 1/2 cup almond flour
- 1/4 cup pure maple syrup
- 3 tbsp melted coconut oil
- 1/2 tsp ground cinnamon
- 1/4 tsp fine sea salt
Instructions:
- Preheat your oven to 350°F (175°C). In a large bowl, toss the sliced apples with lemon juice, cinnamon, maple syrup, and vanilla extract until evenly coated. Transfer the mixture into a 9x9 inch baking dish, spreading them evenly.
- In a medium bowl, combine the oats, almond flour, cinnamon, and salt. Pour in the melted coconut oil and maple syrup, stirring until the mixture forms small, irregular clumps.
- Spoon the topping evenly over the apples. Bake for 30 minutes until the filling is bubbling around the edges and the topping is a deep mahogany-gold.
