Ingredients:

  • 6 large Granny Smith or Honeycrisp apples, peeled and sliced
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/4 cup pure maple syrup
  • 3 tbsp melted coconut oil
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large bowl, toss the sliced apples with lemon juice, cinnamon, maple syrup, and vanilla extract until evenly coated. Transfer the mixture into a 9x9 inch baking dish, spreading them evenly.
  2. In a medium bowl, combine the oats, almond flour, cinnamon, and salt. Pour in the melted coconut oil and maple syrup, stirring until the mixture forms small, irregular clumps.
  3. Spoon the topping evenly over the apples. Bake for 30 minutes until the filling is bubbling around the edges and the topping is a deep mahogany-gold.
