Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) dark rum
- 1 cup (125g) all-purpose flour
- 1 1/2 tsp (7g) baking powder
- 1/4 tsp (1.5g) salt
- 1.5 lbs (680g) tart apples, peeled and cubed
- 1 tbsp (8g) granulated sugar
- 1/2 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 175°C (350°F). Grease the bottom and sides of your 9 inch springform pan. Peel and cube the apples into roughly 2cm (3/4 inch) pieces.
- Cream the 115g softened butter and 150g sugar together until the mixture looks pale and fluffy.
- Beat in the eggs one at a time, then stir in the 5ml vanilla and 30ml rum.
- Slowly stir in the 125g flour, 7g baking powder, and 1.5g salt until just combined. Note: Stop as soon as the flour disappears to keep the cake tender.
- Gently fold the 680g apple cubes into the batter using a spatula until every piece is coated.
- Spread the mixture evenly into the prepared pan.
- Sprinkle the top with the 8g sugar and 2g cinnamon.
- Bake for 35-45 minutes until the top is deep golden brown and a toothpick comes out clean or a few moist crumbs.
