Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) dark rum
  • 1 cup (125g) all-purpose flour
  • 1 1/2 tsp (7g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1.5 lbs (680g) tart apples, peeled and cubed
  • 1 tbsp (8g) granulated sugar
  • 1/2 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 175°C (350°F). Grease the bottom and sides of your 9 inch springform pan. Peel and cube the apples into roughly 2cm (3/4 inch) pieces.
  2. Cream the 115g softened butter and 150g sugar together until the mixture looks pale and fluffy.
  3. Beat in the eggs one at a time, then stir in the 5ml vanilla and 30ml rum.
  4. Slowly stir in the 125g flour, 7g baking powder, and 1.5g salt until just combined. Note: Stop as soon as the flour disappears to keep the cake tender.
  5. Gently fold the 680g apple cubes into the batter using a spatula until every piece is coated.
  6. Spread the mixture evenly into the prepared pan.
  7. Sprinkle the top with the 8g sugar and 2g cinnamon.
  8. Bake for 35-45 minutes until the top is deep golden brown and a toothpick comes out clean or a few moist crumbs.
