Ingredients:
- 2 lbs Roma tomatoes, halved lengthwise
- 3 cloves garlic, peeled and smashed
- 2 tbsp extra-virgin olive oil
- 1 tsp kosher salt
- ½ tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper. Slice the Roma tomatoes in half lengthwise.
- Place the tomatoes cut-side up on the sheet. Drizzle the olive oil over the tops and sprinkle evenly with salt and pepper. Scatter the smashed garlic cloves in between the tomatoes. Roast for 35–40 minutes until the tomatoes slump slightly and the edges turn a deep golden brown.
- Switch your oven to 'Broil.' Move the rack to the top position and roast for another 3–5 minutes until the skins develop blackened, charred blisters and a toasted, smoky aroma.
