- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) ground cinnamon
- 3 cups (450g) Granny Smith or Honeycrisp apples, peeled and diced
- 1 tbsp (8g) lemon juice
- 1/2 tsp (1g) salt
Instructions:
- Peel and dice the apples into uniform 1/2-inch cubes.
- Toss the apple cubes in a small bowl with the lemon juice and salt to preserve color and enhance tartness.
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and cinnamon until no lumps remain.
- Stir in the melted butter, eggs, and vanilla extract, mixing until the batter is smooth and velvet-like, being careful not to overmix.
- Gently fold the diced apples into the batter using a spatula until the fruit is evenly distributed.
- Pour the mixture into the prepared baking pan and smooth the top.
- Bake for 40-45 minutes until the edges are deep golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
