Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp (10g) baking powder
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large (100g) eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (2g) ground cinnamon
  • 3 cups (450g) Granny Smith or Honeycrisp apples, peeled and diced
  • 1 tbsp (8g) lemon juice
  • 1/2 tsp (1g) salt

Instructions:

  1. Peel and dice the apples into uniform 1/2-inch cubes.
  2. Toss the apple cubes in a small bowl with the lemon juice and salt to preserve color and enhance tartness.
  3. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  4. In a large bowl, whisk together the flour, sugar, baking powder, and cinnamon until no lumps remain.
  5. Stir in the melted butter, eggs, and vanilla extract, mixing until the batter is smooth and velvet-like, being careful not to overmix.
  6. Gently fold the diced apples into the batter using a spatula until the fruit is evenly distributed.
  7. Pour the mixture into the prepared baking pan and smooth the top.
  8. Bake for 40-45 minutes until the edges are deep golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
