Ingredients:
- 1 lb English cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/2 cup feta cheese, crumbled (optional)
- 1 tsp fresh lemon juice (optional)
Instructions:
- Wash all vegetables thoroughly. Dice the cucumber into 1/2 inch cubes and halve the cherry tomatoes. Slice the red onion into paper thin slivers and place all vegetables in a large mixing bowl.
- Combine the olive oil, red wine vinegar, oregano, salt, and pepper in a mason jar.
- Shake the jar vigorously for 30 seconds until the mixture looks opaque and creamy.
- Pour the dressing over the vegetables.
- Gently fold the ingredients together using a spatula until everything is evenly coated.
- If using feta, fold it in last until just combined.
- Stir in the optional lemon juice for a final hit of brightness.
- Taste and add an extra pinch of salt if the flavors aren't popping.
- Serve immediately for maximum crunch.
