Ingredients:

  • 1 lb English cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup feta cheese, crumbled (optional)
  • 1 tsp fresh lemon juice (optional)

Instructions:

  1. Wash all vegetables thoroughly. Dice the cucumber into 1/2 inch cubes and halve the cherry tomatoes. Slice the red onion into paper thin slivers and place all vegetables in a large mixing bowl.
  2. Combine the olive oil, red wine vinegar, oregano, salt, and pepper in a mason jar.
  3. Shake the jar vigorously for 30 seconds until the mixture looks opaque and creamy.
  4. Pour the dressing over the vegetables.
  5. Gently fold the ingredients together using a spatula until everything is evenly coated.
  6. If using feta, fold it in last until just combined.
  7. Stir in the optional lemon juice for a final hit of brightness.
  8. Taste and add an extra pinch of salt if the flavors aren't popping.
  9. Serve immediately for maximum crunch.
