Ingredients:

  • 1 cup (160g) steel cut oats
  • 3 cups (710ml) water
  • 1/2 tsp (3g) fine sea salt
  • 1 tbsp (14g) unsalted butter
  • 1/2 cup (120ml) whole milk
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Place the saucepan over medium heat and melt the butter. Add the dry steel cut oats and stir constantly for 2–3 minutes until a toasted, nutty scent develops and the edges of the grains are slightly golden.
  2. Carefully pour in the water and salt. Bring the mixture to a rolling boil, then immediately reduce the heat to low.
  3. Cover with a tight-fitting lid and simmer for 20 minutes without lifting the lid to maintain steam.
  4. Remove the lid and increase heat to medium-low. Stir vigorously for 2 minutes to release remaining starches.
  5. Stir in the milk, maple syrup, and vanilla extract. Remove from heat once the texture is velvety and glossy.
