Ingredients:

  • 1/2 cup (45g) old-fashioned rolled oats
  • 1 tbsp (12g) chia seeds
  • 1/4 tsp (1.5g) sea salt
  • 3/4 cup (180ml) light canned coconut milk
  • 1/4 cup (60ml) unsweetened coconut milk
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. In a mixing bowl or directly in two mason jars, combine the rolled oats, chia seeds, and salt. Whisk thoroughly to ensure the chia seeds are evenly distributed.
  2. Pour in the light canned coconut milk, carton coconut milk, and vanilla extract. Stir vigorously until no dry pockets of oats remain.
  3. Seal the jars tightly and refrigerate for a minimum of 4 hours or overnight to allow the oats to soften.
