Ingredients:
- 1/2 cup (45g) old-fashioned rolled oats
- 1 tbsp (12g) chia seeds
- 1/4 tsp (1.5g) sea salt
- 3/4 cup (180ml) light canned coconut milk
- 1/4 cup (60ml) unsweetened coconut milk
- 1 tsp (5ml) vanilla extract
Instructions:
- In a mixing bowl or directly in two mason jars, combine the rolled oats, chia seeds, and salt. Whisk thoroughly to ensure the chia seeds are evenly distributed.
- Pour in the light canned coconut milk, carton coconut milk, and vanilla extract. Stir vigorously until no dry pockets of oats remain.
- Seal the jars tightly and refrigerate for a minimum of 4 hours or overnight to allow the oats to soften.
