Ingredients:
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- 1 cup full-fat coconut milk
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1 pinch sea salt
- 1 tbsp toasted coconut flakes
- 1/4 cup fresh berries
Instructions:
- In a medium mixing bowl or directly in two mason jars, combine the rolled oats, chia seeds, coconut milk, maple syrup, vanilla extract, and salt.
- Whisk vigorously for 60 seconds until the mixture is homogenous and no dry clumps of chia seeds remain.
- Seal the jars tightly and place them in the refrigerator for at least 6 hours, or overnight.
- Optional: Give the jars a quick shake after 30 minutes of chilling to break up any settled seeds for a smoother consistency.
- Before serving, top each portion with toasted coconut flakes and fresh berries.
