Ingredients:

  • 1/2 cup rolled oats
  • 2 tbsp chia seeds
  • 1 cup full-fat coconut milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 1 tbsp toasted coconut flakes
  • 1/4 cup fresh berries

Instructions:

  1. In a medium mixing bowl or directly in two mason jars, combine the rolled oats, chia seeds, coconut milk, maple syrup, vanilla extract, and salt.
  2. Whisk vigorously for 60 seconds until the mixture is homogenous and no dry clumps of chia seeds remain.
  3. Seal the jars tightly and place them in the refrigerator for at least 6 hours, or overnight.
  4. Optional: Give the jars a quick shake after 30 minutes of chilling to break up any settled seeds for a smoother consistency.
  5. Before serving, top each portion with toasted coconut flakes and fresh berries.
