Ingredients:

  • 1 cup (200g) packed light brown sugar
  • ½ cup (113g) unsalted butter, cubed
  • ½ cup (120ml) heavy cream, room temperature
  • ½ tsp (3g) fine sea salt
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Combine the brown sugar and cubed butter in your saucepan over medium heat.
  2. Stir constantly with a whisk until the butter melts and the sugar dissolves into a bubbling syrup. Note: This takes about 3-4 minutes.
  3. Slowly pour in the heavy cream.
  4. Whisk in the sea salt.
  5. Bring the mix to a gentle boil, then immediately drop the heat to low.
  6. Simmer for 3-5 minutes, stirring occasionally, until the sauce looks glossy and thickens slightly.
  7. Remove the pan from the heat immediately.
  8. Stir in the vanilla extract. Note: Adding vanilla at the end keeps the flavor from evaporating.
  9. Let the sauce cool. It will thicken significantly to a velvety consistency as it sits.
