Ingredients:
- 1 cup (200g) packed light brown sugar
- ½ cup (113g) unsalted butter, cubed
- ½ cup (120ml) heavy cream, room temperature
- ½ tsp (3g) fine sea salt
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Combine the brown sugar and cubed butter in your saucepan over medium heat.
- Stir constantly with a whisk until the butter melts and the sugar dissolves into a bubbling syrup. Note: This takes about 3-4 minutes.
- Slowly pour in the heavy cream.
- Whisk in the sea salt.
- Bring the mix to a gentle boil, then immediately drop the heat to low.
- Simmer for 3-5 minutes, stirring occasionally, until the sauce looks glossy and thickens slightly.
- Remove the pan from the heat immediately.
- Stir in the vanilla extract. Note: Adding vanilla at the end keeps the flavor from evaporating.
- Let the sauce cool. It will thicken significantly to a velvety consistency as it sits.
