Ingredients:
- 1 block (225g) Greek Feta cheese
- 2 pints (500g) Cherry tomatoes
- 1/3 cup (80ml) Extra virgin olive oil
- 4 cloves (20g) Garlic, smashed
- 1 tsp (5g) Dried oregano
- 1/2 tsp (3g) Red pepper flakes
- 1/2 tsp (3g) Black pepper
- 1 lb (450g) Pasta
- 1/2 cup (15g) Fresh basil leaves, torn
- 1/4 cup (60ml) Reserved pasta water
- 1 tbsp (15ml) Fresh lemon juice
Instructions:
- Preheat your oven to 400°F (200°C). Place the block of feta directly in the center of your baking dish. Surround the cheese with cherry tomatoes and smashed garlic cloves. Drizzle the olive oil evenly over everything and sprinkle with dried oregano, red pepper flakes, and black pepper.
- Bake for 30 minutes until the cherry tomatoes are blistered and bursting, and the edges of the feta are mahogany-colored brown.
- While the feta bakes, boil a large pot of salted water and cook your pasta until al dente. Reserve 1/4 cup of starchy pasta water before draining. Once the bake is out of the oven, use a wooden spoon to mash the softened feta and tomatoes together, stirring vigorously until smooth and creamy.
- Fold the drained pasta into the sauce. If the sauce is too thick, stir in the reserved pasta water one tablespoon at a time until glossy. Fold in the fresh basil and lemon juice just before serving.
