Ingredients:
- 3 cups (375g) bread flour
- 1/4 cup (50g) granulated sugar
- 2 1/4 tsp (7g) active dry yeast
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) warm milk
- 2 large eggs
- 1/2 cup (113g) unsalted butter, softened and cubed
- 2 cups (300g) apples, finely diced
- 4 tbsp (56g) unsalted butter
- 1/2 cup (100g) brown sugar, packed
- 1 tbsp (8g) ground cinnamon
- 1 tbsp (8g) cornstarch
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) heavy cream
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Bloom the yeast in warm milk with a pinch of sugar for 5-10 minutes until foamy.
- In a stand mixer, combine bread flour, remaining sugar, and salt. Slowly incorporate the yeast mixture and eggs, kneading on low for 5 minutes.
- Add softened butter one cube at a time, kneading until the dough is smooth, elastic, and pulls away from the sides of the bowl.
- Place dough in a greased bowl, cover, and let rise in a warm spot for 1.5 hours or chill in the refrigerator for 2 hours.
- Melt butter in a skillet over medium heat. Sauté diced apples until softened, then stir in brown sugar, cinnamon, and cornstarch. Cook 3-5 minutes until thickened, then remove from heat and stir in vanilla extract.
- Roll out dough into a rectangle, spread the cooled apple filling evenly, roll into a log, slice lengthwise, and twist the two strands together.
- Place the twisted dough into a greased 9x5 inch loaf pan and bake at 350°F (175°C) for 40 minutes.
- Whisk powdered sugar, heavy cream, and vanilla extract until smooth; glaze the loaf while still warm.
