Ingredients:
- 1 lb (450g) chicken tenders
- 1 cup (60g) Panko breadcrumbs
- 1 tsp (2g) paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 large egg, beaten
- 1 tbsp (15ml) unsalted almond milk or skim milk
- Cooking spray (olive oil or avocado oil)
- 2 tbsp (28g) unsalted butter, melted
- 3 tbsp (63g) honey
- 3 cloves (9g) garlic, minced
- 1 tsp (5ml) lemon juice
Instructions:
- Set up the breading station: in one bowl whisk the egg and milk; in a second bowl combine Panko, paprika, salt, and pepper.
- Dip each chicken tender into the egg wash, then press firmly into the Panko mixture until fully enveloped.
- Preheat the air fryer to 390°F (200°C) and lightly spray the basket with cooking spray.
- Arrange tenders in a single layer in the basket and spray the tops generously with cooking spray.
- Air fry for 10–12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
- While the chicken rests for 2 minutes, whisk together melted butter, honey, minced garlic, and lemon juice in a medium bowl.
- Quickly toss the hot tenders in the honey butter glaze until lightly coated.
